Spiced Millet Pudding

1/4 tsp ground cardamom
1/4 tsp cinnamon
1/2 cup chopped dates
2 tbsp of honey or maple syrup
1/2 tsp vanilla
bring mix almost to a boil, then turn down heat and simmer, stirring occasionally for 15 – 20 minutes until most of the milk is absorbed
remove from heat and let sit for 10 minutes – serve immediately or chill and serve
**Great on its own, you can also top the pudding with any or all of – slivered almonds, sliced bananas and unsweetened coconut -and pour a little of your choice of dairy or nondairy milk or milk on top!
